Spinach Artichoke Chicken Bake Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1 cup canned or jarred artichoke hearts drained and chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes optional for a little heat

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with non-stick spray or a thin layer of olive oil.
  • Place the chicken breasts on a cutting board and pound them to an even thickness using a meat mallet or rolling pin. This ensures even cooking. If the chicken breasts are too thick, you can slice them in half lengthwise.
  • In a large mixing bowl, combine: Cream cheese, Sour cream, Mayonnaise, Chopped spinach, Chopped artichokes, Garlic powder, Onion powder, Salt and pepper, Half of the mozzarella cheese.
  • Mix well until you have a smooth, creamy mixture.
  • Place the chicken breasts in the prepared baking dish. Spread the spinach artichoke mixture evenly over the top of each piece of chicken.
  • Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly over the top. If you like a little spice, sprinkle some red pepper flakes as well. Bake in the preheated oven for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Notes

  • Use fresh spinach for the best texture, but frozen spinach works too. Just be sure to thaw and squeeze out excess water.
  • Don’t overbake the chicken—use a meat thermometer to check for doneness.
  • For extra crunch, add some breadcrumbs or crushed crackers on top before baking.
  • Pair with sides like garlic bread, roasted veggies, or a simple salad for a complete meal.
