- 6 flatbreads or pita breads Papa Pita brand recommended
- 2 cups cooked chicken chopped (Costco Bare Life nuggets work well)
- 1 ½ cups sun-dried tomatoes
- 1 ½ cups baby spinach leaves torn
- 2 cups shredded mozzarella cheese
Preheat your oven or air fryer to 350°F.
Make the Sauce: In a medium saucepan, combine heavy cream, chicken broth, garlic, Italian seasoning, Parmesan cheese, and black pepper. Stir well.
Thicken the Sauce: In a small bowl, mix 1/2 tablespoon flour with 1 tablespoon water to create a slurry. Stir it into the sauce and cook over medium heat, whisking until thickened. Remove from heat and cover to keep warm.
Assemble the Pizzas: Lay the pita breads on a flat surface. Spread 3 tablespoons of sauce on each, then top with 1/3 cup cooked chicken, 1/4 cup sun-dried tomatoes, and 1/4 cup torn spinach. Sprinkle 1/3 cup shredded mozzarella over the top.
Bake or Air Fry:
Oven: Place the pita pizzas on a greased baking sheet and bake for 10–12 minutes, until the cheese melts.
Air Fryer: Cook one pita at a time for 5–6 minutes, until the cheese melts.
