Last weekend, I was on a mission to create the ultimate game-day snack, and Velveeta Queso definitely lived up to the hype! With just two simple ingredients, I whipped up a creamy, cheesy dip that was a hit with everyone. Whether you're watching sports, hosting a party, or just craving something indulgent, this queso is a total crowd-pleaser.

Ingredients
  

  • Velveeta cheese block
  • Rotel® diced tomatoes and green chilies

Instructions
 

  • Start by cutting your Velveeta cheese into small cubes. This helps it melt quickly and evenly in the microwave. Open your can of Rotel and set it aside without draining the liquid.
  • Place the Velveeta cubes and the entire can of Rotel (with the liquid) in a microwave-safe bowl. Microwave the mixture on high for about 3 minutes.
  • After 3 minutes, take the bowl out, give it a good stir to combine, and pop it back in the microwave for another 2 minutes. Keep stirring until the cheese is fully melted and the mixture is smooth.
  • Pour the queso into a serving bowl and keep it warm for serving. Pair it with tortilla chips, fresh veggies, or even soft pretzels for dipping.

Notes

  • Cut Smaller Cubes: Smaller cubes of Velveeta melt faster and more evenly, saving you time.
  • Don’t Drain Rotel: The liquid in the canned tomatoes adds flavor and helps create a smooth texture.
  • Stir Often: Stirring the cheese as it melts ensures it doesn’t burn or stick to the bowl.
  • Keep It Warm: Serve the queso out of a slow cooker to keep it warm and creamy throughout your gathering.
