Watermelon Mojito Recipe

I made this watermelon mojito last weekend, and I can’t stop raving about it. Fresh, fruity, and incredibly refreshing, this summer cocktail has become my go-to drink for unwinding.

- 2 watermelon chunks seeds removed
- Juice of 1 lime
- 2 teaspoons sugar
- Handful of mint leaves plus more for garnish
- 2 ounces white rum
- Ice
- Ginger ale chilled, for topping
Start by taking your mixing glass and dropping in the watermelon chunks. Add the fresh lime juice and sugar for a sweet, citrusy base. Use a muddler to press and mash everything together. This step releases that sweet watermelon juice and blends the flavors. Don't skimp on the muddling; this is where the magic happens!
Once your watermelon and lime mixture is muddled to perfection, toss in a handful of fresh mint leaves. Gently stir (or muddle lightly, if preferred) to release the aromatic oils of the mint without over-crushing it. The gentle minty aroma will elevate your mojito to the next level.
Measure out 2 ounces of white rum using your jigger and pour it into the glass. The rum adds a smooth and boozy kick, which pairs beautifully with the fruity sweetness of the watermelon.
Grab some ice cubes and fill your glass to the top. Then, finish it all off by topping with chilled ginger ale. The ginger ale adds that fizzy, slightly spicy twist, making your mojito extra refreshing.
