🛒 Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cottage cheese or Greek yogurt (for protein)
  • 1 cup shredded mozzarella or cheddar
  • 2 eggs
  • ½ cup milk (or almond milk)
  • 1 tsp black pepper
  • 1 tsp paprika
  • ½ tsp salt
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Optional protein boost:

  • 1 cup cooked lentils / chickpeas
  • OR 1 cup chopped tofu
  • OR 1 cup quinoa

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F).
  2. Heat olive oil in a pan. Sauté onion, garlic, mushrooms, broccoli, cauliflower, and bell pepper for 5–7 minutes.
  3. In a bowl, whisk eggs, cottage cheese, milk, salt, and spices.
  4. Mix cooked veggies into the egg mixture. Add optional protein if using.
  5. Pour into a greased baking dish.
  6. Top with shredded cheese.
  7. Bake 30–35 minutes until set and golden.
