🧾 Ingredients
- 2 cups cooked shredded chicken
- 1 cup full-fat cottage cheese
- ½ cup cream cheese, softened
- 1 cup shredded mozzarella
- ½ cup parmesan cheese
- 1 cup mushrooms, sliced
- 1½ cups fresh spinach, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- ½ cup heavy cream
- ½ tsp onion powder
- ½ tsp Italian seasoning
- ½ tsp black pepper
- Salt to taste
👩🍳 Instructions
1️⃣ Preheat oven
Preheat oven to 375°F (190°C) and grease a casserole dish.
2️⃣ Cook vegetables
- Melt butter in a skillet over medium heat.
- Add mushrooms and cook 4–5 minutes until softened.
- Add garlic and spinach and cook until spinach wilts.
3️⃣ Make creamy mixture
In a large bowl combine:
- cottage cheese
- cream cheese
- heavy cream
- mozzarella
- parmesan
- onion powder
- Italian seasoning
- pepper
Mix until smooth.
4️⃣ Combine
Add shredded chicken and the cooked mushroom-spinach mixture.
Stir well until evenly combined.
5️⃣ Bake
Spread mixture into the baking dish.
Top with extra mozzarella if desired.
Bake 25–30 minutes until bubbly and golden.
6️⃣ Rest & serve
Let sit 5–10 minutes before serving so it sets nicely.
