🧀 Cheesy Focaccia in a Pan

🧾 Ingredients
2¼ tsp (1 packet) instant yeast
1 cup (240 ml) warm water
1 tbsp honey or sugar (optional, helps yeast)
3 tbsp olive oil, divided
2½ cups all-purpose flour
1 tsp salt
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tsp dried rosemary (optional)
Flaky sea salt for topping
👩‍🍳 Instructions
1️⃣ Activate yeast

In a bowl, mix warm water, honey, and yeast. Let sit 5 minutes until foamy.
2️⃣ Make dough

Add flour, salt, and 2 tbsp olive oil. Mix until sticky dough forms.
3️⃣ First rise

Transfer dough to a well-oiled pan (9×13 or cast iron).
Cover and let rise 1–1½ hours until doubled.
4️⃣ Add cheese & toppings

Drizzle remaining 1 tbsp olive oil over the dough.
Dimple dough with fingers.
Sprinkle mozzarella, Parmesan, rosemary, and flaky salt.
5️⃣ Bake

Bake at 400°F (205°C) for 22–25 minutes, until golden and bubbly.
6️⃣ Cool & serve

Let cool slightly, then cut into squares and serve warm.
