Zucchini Tortillas (Low-Carb & Cheesy)

Ingredients List

  • 2 cups zucchini, finely shredded
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour (or regular flour)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Step-by-Step Instructions

1. Prep the zucchini

Shred the zucchini and squeeze out as much water as possible using a towel.
(This step is very important for texture.)


2. Make the mixture

In a bowl, combine:

  • shredded zucchini
  • mozzarella
  • Parmesan
  • egg
  • almond flour
  • garlic powder
  • onion powder
  • salt
  • black pepper

Mix until well combined.


3. Shape tortillas

Line a baking tray with parchment paper.
Scoop portions of the mixture and flatten into thin circles (tortilla shape).


4. Bake

Preheat oven to 375ยฐF (190ยฐC).
Bake for 18โ€“22 minutes, until golden and slightly crisp on edges.


5. Optional crisping

For extra texture, lightly pan-fry each tortilla for 1โ€“2 minutes per side.


6. Serve

Let cool slightly, then use as wraps or eat as is.
