Servings: 10 to 12 donuts
Prep Time: 20 minutes
Bake Time: 15 to 18 minutes
Cooling Time: 15 minutes
Total Time: About 50 minutes
Ingredients List
For the Blueberry Donuts
2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
3/4 cup buttermilk
1/3 cup unsalted butter, melted
1 1/2 teaspoons vanilla extract
1 cup fresh blueberries
1 tablespoon all-purpose flour, for tossing blueberries
For the Vanilla Glaze
1 1/2 cups powdered sugar
2 to 3 tablespoons milk
1/2 teaspoon vanilla extract
Step-by-Step Instructions

  1. Prepare the oven and pan
Preheat your oven to 350°F (175°C). Lightly grease a donut pan.
  2. Mix the dry ingredients
In a large mixing bowl, whisk together:

flour
sugar
baking powder
salt
cinnamon

  1. Mix the wet ingredients
    In another bowl, whisk together:

eggs
buttermilk
melted butter
vanilla extract

  1. Combine the batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  2. Add the blueberries
Toss the blueberries with 1 tablespoon flour, then gently fold them into the batter. This helps keep them from sinking and bleeding too much into the batter.
  3. Fill the donut pan
Spoon or pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.
  4. Bake
Bake for 15 to 18 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the donut comes out clean.
  5. Cool
Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  6. Make the glaze
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk as needed for your preferred glaze thickness.
  7. Glaze the donuts
Dip the cooled donuts into the glaze or spoon it over the top. Let the glaze set for 10 to 15 minutes before serving.

Serving Suggestions
These blueberry donuts are best enjoyed:

fresh the same day
with hot coffee or tea
with a few extra fresh berries on the side
slightly chilled if you like a firmer glaze
Storage
Store in an airtight container at room temperature for up to 2 days
Refrigerate for up to 4 days
For best texture, let refrigerated donuts come to room temperature before serving
Tips & Variations
Use frozen blueberries if needed, but do not thaw them first
Add a little lemon zest to the batter for a bright blueberry-lemon flavor
For a richer finish, use a cream glaze instead of a milk glaze
If you do not have a donut pan, this batter can also be baked as muffins
