🧾 Ingredients

  • ½ cup cottage cheese
  • 2 large eggs
  • ½ cup oats (or oat flour)
  • Zest of 1 orange
  • 1–2 tbsp fresh orange juice
  • ½ tsp baking powder
  • Pinch of salt
  • ½ tsp vanilla extract (optional)
  • Cooking spray or butter for pan

👩‍🍳 Instructions

1️⃣ Blend batter

  • In a blender or food processor, combine cottage cheese, eggs, oats, orange zest, orange juice, baking powder, salt, and vanilla
  • Blend until smooth

2️⃣ Heat pan

  • Preheat a non-stick skillet or griddle over medium-low heat
  • Lightly grease with cooking spray or butter

3️⃣ Cook pancakes

  • Pour 2–3 tbsp batter per pancake
  • Cook 2–3 minutes until bubbles form and edges are set
  • Flip and cook 1–2 minutes more until golden

4️⃣ Serve

  • Stack pancakes and serve warm with your choice of toppings
