🥦 Cheesy Baked Vegetable Bites

Ingredients

For the bites:

  • 2 cups finely chopped broccoli or zucchini
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil

For the creamy herb dip:

  • ½ cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh dill, chopped
  • ½ tsp garlic powder
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables:
    Finely chop the broccoli or zucchini. If using zucchini, squeeze out as much excess moisture as possible with a clean kitchen towel.
  2. Make the mixture:
    Add the vegetables, mozzarella, Parmesan, eggs, breadcrumbs, garlic, parsley, Italian seasoning, salt, and pepper to a large bowl. Mix until everything is evenly combined.
  3. Shape:
    Scoop out about 2 tablespoons of mixture at a time and form into small balls or thick patties. Place on a parchment-lined baking sheet.
  4. Bake:
    Lightly brush or spray the bites with olive oil. Bake at 400°F (200°C) for 20–25 minutes, turning once halfway through, until golden brown and crisp.
  5. Make the dip:
    Mix sour cream or Greek yogurt with mayonnaise, herbs, garlic powder, lemon juice, salt, and pepper. Chill until ready to serve.
  6. Serve:
    Let the bites cool for a few minutes, then serve warm with the creamy herb dip.

Tip: For an extra-crispy exterior, place the bites under the broiler for 1–2 minutes at the end, watching closely so they don’t burn.
