Ingredients
For the bites:
- 2 cups finely chopped broccoli or zucchini
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- ¾ cup breadcrumbs
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
For the creamy herb dip:
- ½ cup sour cream or Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, chopped
- ½ tsp garlic powder
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare the vegetables:
Finely chop the broccoli or zucchini. If using zucchini, squeeze out as much excess moisture as possible with a clean kitchen towel. - Make the mixture:
Add the vegetables, mozzarella, Parmesan, eggs, breadcrumbs, garlic, parsley, Italian seasoning, salt, and pepper to a large bowl. Mix until everything is evenly combined. - Shape:
Scoop out about 2 tablespoons of mixture at a time and form into small balls or thick patties. Place on a parchment-lined baking sheet. - Bake:
Lightly brush or spray the bites with olive oil. Bake at 400°F (200°C) for 20–25 minutes, turning once halfway through, until golden brown and crisp. - Make the dip:
Mix sour cream or Greek yogurt with mayonnaise, herbs, garlic powder, lemon juice, salt, and pepper. Chill until ready to serve. - Serve:
Let the bites cool for a few minutes, then serve warm with the creamy herb dip.
Tip: For an extra-crispy exterior, place the bites under the broiler for 1–2 minutes at the end, watching closely so they don’t burn.
