Easy Chocolate Chip Cookies (High-Protein)

Ingredients (Makes ~12 cookies)
- 1 cup oat flour (or blended oats)
- ¼ cup vanilla protein powder
- ¼ tsp baking soda
- Pinch salt
- ¼ cup melted butter or coconut oil
- ⅓ cup brown sugar (or coconut sugar)
- ¼ cup plain non-fat Greek yogurt
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup dark chocolate chips (70%+)
Instructions
- Preheat oven to 175°C (350°F). Line a tray with parchment.
- Dry mix: Oat flour, protein powder, baking soda, salt.
- Wet mix: Butter, sugar, Greek yogurt, egg, vanilla until smooth.
- Combine wet + dry. Fold in chocolate chips. Dough will be soft.
- Scoop 12 mounds onto tray; lightly flatten.
- Bake 9–11 minutes until edges set and centers look slightly soft.
- Cool 10 minutes (they firm up as they cool).
