Ingredients
For the pizzas
- 4 small low-carb/high-fiber flour tortillas (about 6–8 inches)
- 8 oz 96% lean ground beef
- 1 packet taco seasoning, preferably lower-sodium
- 1 cup fat-free refried beans
- ½ cup light enchilada sauce or mild red taco sauce
- ¾ cup reduced-fat Mexican-blend shredded cheese
- ½ cup diced tomatoes
- ¼ cup diced onion
- 2 tbsp sliced jalapeños, optional
- 2 tbsp chopped cilantro, optional
Optional creamy topping
- ½ cup nonfat plain Greek yogurt
- 1–2 tbsp salsa
- Squeeze of lime
👩🍳 Directions
- Crisp the tortillas:
Heat oven to 400°F. Spray both sides of the tortillas lightly with cooking spray. Place directly on a baking sheet and bake about 5–7 minutes per side, until golden and crispy. - Cook the beef:
Brown the lean ground beef in a skillet. Drain if necessary and add taco seasoning plus a couple tablespoons of water. Simmer for 2–3 minutes. - Warm the beans:
Heat the fat-free refried beans until they’re easy to spread. Add a splash of water if they’re too thick. - Build the pizza:
Spread ¼ cup beans over one crispy tortilla. Top with about 2 oz seasoned beef. Add a second tortilla on top. - Sauce + cheese:
Spread about 2 tbsp enchilada/taco sauce over the top tortilla and sprinkle with about 3 tbsp reduced-fat cheese. - Bake:
Return to the oven for 5–7 minutes, until the cheese melts and the edges are crispy. - Finish:
Top with diced tomatoes, onion, jalapeños and cilantro. For a creamy drizzle, mix Greek yogurt with salsa and lime and drizzle lightly over the pizza.

- Load up on tomatoes, onions, lettuce, cilantro and salsa for lots of volume.
- Greek yogurt + lime + salsa makes a fantastic replacement for sour cream.
- For the crispiest result, air fry the tortillas rather than frying them in oil.
