Ingredients

  • 1 cup Plain Greek Yogurt (use full-fat for strict Keto, or non-fat for lower calories)
  • 1 scoop (30g) Vanilla Protein Powder (Whey-Casein blend or Zero-Carb Isolate)
  • 1/4 cup Fresh Blueberries (lightly mashed or finely diced)
  • 1 tbsp Low-Carb Sweetener (Monk Fruit, Erythritol, or Allulose; use honey if not low-carb)

Instructions

  1. Prepare the Base: In a medium bowl, whisk together the Greek yogurt, vanilla protein powder, and low-carb sweetener until smooth and completely lump-free.
  2. Add the Berry Swirl: Lightly mash the blueberries in a small dish with a fork. Gently fold the mashed blueberries into the yogurt mixture 2–3 times to create a marbled swirl pattern.
  3. Mould & Portion: Scoop the mixture evenly into round silicone cake-pop molds (or dollop onto a parchment-lined baking sheet).
  4. Freeze: Freeze for 1.5 to 2 hours until solid. Store in an airtight container in the freezer and thaw for 2–3 minutes before eating.

Pro Tip: Using a Whey-Casein blend or pure Casein protein powder creates a much thicker, ice-cream-like consistency that freezes better than pure whey isolate!
