Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together pumpkin puree, Greek yogurt, eggs, vanilla, and sweetener until smooth.
- Add protein powder, pumpkin pie spice, cinnamon, and salt. Mix until fully combined.
- Pour the mixture into a greased 8-inch pie dish or baking dish.
- Bake for 35–45 minutes until the center is set but slightly soft.
- Cool completely, then refrigerate for at least 2 hours for a creamy pie texture.
- Serve with whipped Greek yogurt or light whipped cream and a sprinkle of cinnamon.
