- 8 oz (225 g)ย rice noodles
- 1 lb (450 g)ย ground beef
- 1ยฝ cupsย snap peas
- 1 smallย onion, thinly sliced
- 2 clovesย garlic, minced
- 1 tspย fresh ginger, grated
- 2 tbspย soy sauceย or tamari
- 1 tbspย oyster sauceย (optional)
- 1 tbspย sesame oil
- 1 tbspย vegetable or avocado oilย (for stir-fry)
- Optional garnish: sesame seeds, sliced green onions, chili flakes

1๏ธโฃ Cook noodles
- Cook rice noodles according to package instructions, drain, and set aside.
2๏ธโฃ Brown beef
- Heat oil in a skillet or wok over medium-high heat.
- Add ground beef and cook until browned. Drain excess fat if needed.
3๏ธโฃ Add aromatics & veggies
- Add garlic, ginger, and onion to the beef. Stir-fry 1โ2 minutes.
- Add snap peas and cook 2โ3 minutes until crisp-tender.
4๏ธโฃ Combine noodles & sauce
- Add cooked noodles, soy sauce, oyster sauce, and sesame oil.
- Toss well to coat and heat through, 2โ3 minutes.
5๏ธโฃ Serve & garnish
- Divide into bowls. Sprinkle with sesame seeds, green onions, or chili flakes if desired.
