For Cooking

  • 1โ€“2 tablespoons olive oil or melted butter (optional)

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Rolling pin
  • Cast-iron skillet or heavy frying pan
  • Clean kitchen towel

Step 1: Activate the Yeast

  1. In a small bowl, combine:
    • Warm water
    • Sugar
    • Yeast
  2. Stir gently.
  3. Let sit for 5โ€“10 minutes until foamy.

If the mixture does not foam, the yeast may be inactive and should be replaced.

Step 2: Mix the Dough

  1. In a large bowl, whisk together:
    • Flour
    • Salt
    • Milk powder (if using)
  2. Add:
    • Activated yeast mixture
    • Olive oil
    • Yogurt (if using)
  3. Stir until a shaggy dough forms.

Step 3: Knead the Dough

By Hand

  1. Transfer dough to a lightly floured surface.
  2. Knead for 8โ€“10 minutes until smooth and elastic.

Stand Mixer

  1. Knead with the dough hook for 5โ€“7 minutes on medium speed.

The dough should feel soft and slightly tacky but not sticky.

Step 4: First Rise

  1. Lightly oil a clean bowl.
  2. Place the dough inside and turn to coat.
  3. Cover with a kitchen towel or plastic wrap.

Let rise in a warm place for 1โ€“1ยฝ hours or until doubled in size.

Step 5: Divide and Shape

  3. Divide into 8 equal portions.

Roll each portion into a smooth ball.

Cover and let rest for 10 minutes.

  1. Roll each ball into a circle about:
    • 6โ€“7 inches (15โ€“18 cm) wide
    • ยผ inch (6 mm) thick
  2. Keep the remaining dough covered while working.

Step 7: Cook on the Skillet

  1. Heat a cast-iron skillet or heavy pan over medium-high heat.
  2. The pan should be hot but not smoking.

Cook Each Flatbread

  1. Place one rolled dough circle onto the dry skillet.
  2. Cook for 1โ€“2 minutes.

You should see bubbles begin to form.

  1. Flip and cook another 1โ€“2 minutes.
  2. Flip once more if needed.

The bread should develop golden brown spots and puff in places.

Step 8: Keep Soft

As each flatbread finishes:

  1. Transfer to a plate.
  2. Cover immediately with a clean kitchen towel.

This traps steam and keeps the breads soft and flexible.

For extra flavor, lightly brush with melted butter or olive oil.

Optional Garlic Butter Topping

Mix:

  • 3 tablespoons melted butter
  • 2 cloves garlic, finely minced
  • 1 tablespoon chopped parsley

Brush over warm flatbreads before serving.
