🥦 High-Protein Crispy Broccoli Cheese Bites

Ingredients — Makes 12–14 bites

  • 2 cups broccoli florets, finely chopped
  • 250 g cooked chicken breast, finely shredded or minced
  • ½ cup cottage cheese
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 1 large egg
  • ½ cup oat flour
  • 2 tbsp Greek yogurt
  • 2 cloves garlic, minced
  • 2 tbsp chopped spring onion or parsley
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt, or to taste

For the crispy coating

  • ¾ cup panko breadcrumbs
  • ¼ cup grated Parmesan
  • ½ tsp paprika
  • Cooking spray or a little olive oil

Instructions

  1. Prepare the broccoli: Steam or microwave the broccoli for 2–3 minutes until slightly tender. Let it cool, then chop very finely. Squeeze out any excess moisture.
  2. Make the high-protein mixture: In a large bowl, combine the broccoli, chicken, cottage cheese, mozzarella, Parmesan, egg, Greek yogurt, oat flour, garlic, herbs, and seasonings.
  3. Shape: Scoop out portions and roll into balls or slightly flattened bites. If the mixture feels too wet, add 1–2 extra tablespoons of oat flour.
  4. Coat: Mix the panko, Parmesan, and paprika in a separate bowl. Roll each bite generously in the coating.
  5. Air fry: Preheat to 190°C / 375°F. Lightly spray the bites with oil and air fry for 10–14 minutes, turning halfway, until golden and crispy.

Oven method

Bake at 200°C / 400°F for 18–22 minutes, flipping halfway through.

🔥 Extra cheesy high-protein tip

For an even higher-protein version, add 1 scoop (about 25 g) unflavored protein powder or replace part of the oat flour with protein powder. Serve with a Greek-yogurt garlic dip for an extra protein boost.
