Ingredients — Makes 12–14 bites
- 2 cups broccoli florets, finely chopped
- 250 g cooked chicken breast, finely shredded or minced
- ½ cup cottage cheese
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 1 large egg
- ½ cup oat flour
- 2 tbsp Greek yogurt
- 2 cloves garlic, minced
- 2 tbsp chopped spring onion or parsley
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp salt, or to taste
For the crispy coating
- ¾ cup panko breadcrumbs
- ¼ cup grated Parmesan
- ½ tsp paprika
- Cooking spray or a little olive oil
Instructions
- Prepare the broccoli: Steam or microwave the broccoli for 2–3 minutes until slightly tender. Let it cool, then chop very finely. Squeeze out any excess moisture.
- Make the high-protein mixture: In a large bowl, combine the broccoli, chicken, cottage cheese, mozzarella, Parmesan, egg, Greek yogurt, oat flour, garlic, herbs, and seasonings.
- Shape: Scoop out portions and roll into balls or slightly flattened bites. If the mixture feels too wet, add 1–2 extra tablespoons of oat flour.
- Coat: Mix the panko, Parmesan, and paprika in a separate bowl. Roll each bite generously in the coating.
- Air fry: Preheat to 190°C / 375°F. Lightly spray the bites with oil and air fry for 10–14 minutes, turning halfway, until golden and crispy.
Oven method
Bake at 200°C / 400°F for 18–22 minutes, flipping halfway through.
