Ingredients
Makes 1 small loaf
- 1 cup cottage cheese
- 3 large eggs
- ½ cup vanilla protein powder
- 2 tablespoons almond butter or peanut butter
- 1–2 tablespoons granulated sweetener, optional
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon, optional
Instructions
- Preheat the oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- Blend the wet ingredients:
Add cottage cheese, eggs, almond butter, vanilla, and sweetener to a blender. Blend until completely smooth. - Add the dry ingredients:
Pour the mixture into a bowl and stir in protein powder, baking powder, salt, and cinnamon. - Prepare the pan:
Pour the batter into the lined loaf pan and smooth the top. - Bake:
Bake for approximately 25–35 minutes, until the top is lightly golden and the center is set. - Cool:
Let it cool for 10–15 minutes before removing it from the pan. Allow it to cool further before slicing.
