🍞 No-Flour, High-Protein Soft Bread

Soft, fluffy, and simple to make without traditional flour or added sugar. This version is lightly sweet and works well as a quick protein-rich treat.

Ingredients

Makes 1 small loaf

  • 1 cup cottage cheese
  • 3 large eggs
  • ½ cup vanilla protein powder
  • 2 tablespoons almond butter or peanut butter
  • 1–2 tablespoons granulated sweetener, optional
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Line a small loaf pan with parchment paper.
  2. Blend the wet ingredients:
    Add cottage cheese, eggs, almond butter, vanilla, and sweetener to a blender. Blend until completely smooth.
  3. Add the dry ingredients:
    Pour the mixture into a bowl and stir in protein powder, baking powder, salt, and cinnamon.
  4. Prepare the pan:
    Pour the batter into the lined loaf pan and smooth the top.
  5. Bake:
    Bake for approximately 25–35 minutes, until the top is lightly golden and the center is set.
  6. Cool:
    Let it cool for 10–15 minutes before removing it from the pan. Allow it to cool further before slicing.

  • Sugar-free chocolate chips
