Ingredients
- 4 cups finely shredded cabbage
- 2 large eggs
- ½ cup shredded cheese (cheddar or mozzarella)
- ¼ cup almond flour (or coconut flour)
- 2 tbsp chopped green onions
- 2 tbsp fresh coriander or parsley
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp onion powder
- Salt to taste
- 1–2 tbsp olive oil for cooking
Instructions
- Prepare the cabbage
- Add shredded cabbage to a bowl with a little salt.
- Let it sit for 5–10 minutes, then squeeze out excess moisture.
- Make the mixture
- Add eggs, cheese, almond flour, green onions, herbs, garlic, and seasonings.
- Mix everything until well combined.
- Shape the fritters
- Form small patties with your hands.
- Cook
- Heat a non-stick pan with olive oil.
- Cook fritters for 3–4 minutes per side until golden and crispy.
- Spray lightly with oil and air fry at 190°C (375°F) for 10–12 minutes, flipping halfway.
- Serve
- Serve warm with Greek yogurt dip, sour cream, or your favourite low-carb sauce.
