Ingredients:
1 large sweet or yellow onion
2 large eggs
1 cup finely crushed pork rinds
1/2 cup finely grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
1/4 teaspoon salt, or to taste
1/4 teaspoon onion powder
Olive oil cooking spray
Instructions
Start by peeling the onion and cutting off the root and stem ends. Separate the onion into individual petals or thick wedges, keeping the pieces large enough to handle easily. Pat them dry with a paper towel so the coating sticks better.
In a shallow bowl, whisk the eggs until smooth. In another bowl, combine the crushed pork rinds, Parmesan, garlic powder, paprika, Italian seasoning, black pepper, salt, and onion powder. Mix everything thoroughly so the seasoning is evenly distributed throughout the coating.
Dip each onion petal into the beaten egg, making sure it is completely covered. Let any excess egg drip off, then place the onion into the seasoned pork rind mixture. Press the coating gently onto all sides so it adheres well. Repeat with the remaining onion petals.
Preheat your air fryer to 375°F (190°C) for about 3 minutes. Lightly spray the air fryer basket with cooking spray and arrange the coated onion petals in a single layer. Avoid overcrowding the basket because the hot air needs room to circulate and crisp the coating.
Lightly spray the tops with olive oil and air fry for 8–10 minutes, turning them carefully halfway through. Cook until the coating is golden brown and crisp and the onion is tender. Depending on the size of your onion pieces and your air fryer, you may need an additional 1–3 minutes.
Serve immediately while they are hot and crispy. They are delicious with ranch dressing, garlic mayo, spicy mayo, or another keto-friendly dipping sauce.
