Ingredients (1–2 servings)
- 1 cup cottage cheese
- 1 large egg
- ½ cup fresh or frozen blueberries
- 2 tbsp almond flour (or oat flour)
- 1–2 tbsp maple syrup or honey (optional)
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish or ramekin.
- Blend cottage cheese, egg, vanilla, maple syrup, almond flour, baking powder, cinnamon, and salt until smooth.
- Fold in blueberries gently.
- Pour mixture into the baking dish and add extra blueberries on top.
- Bake for 30–35 minutes until the center is set and the top is lightly golden.
- Let it cool for a few minutes before serving.
