INGREDIENTS NOTES:
COTTAGE CHEESE:
- We can use the full-fat cottage cheese because of its creamy texture and keto-friendly fat content.
KETO SWEETENER:
- I use the Erythritol to sweeten these brownie bites and we can easily change the amount of Erythritol or sweetener according to the taste.
PROTEIN POWDER:
- We can select plant-based, casein, or whey protein powder which is based on the dietary requirements.
ALMOND FLOUR:
- Almond flour is low-carb flour and gluten-free substitute of all-purpose flour that adds texture and this is also good for keto baking as compare to other keto flour.
FLAXSEED AND CHIA SEED:
- It is optional to use the flex seeds and chia seeds and we can leave out if we want, but they add fiber and omega-3s.
INSTRUCTION:
- Take a mixing bowl and add the almond flour, protein powder, cottage cheese, sweetener, vanilla extract, and cocoa powder.
- Combine all these components with the whisk till they get thoroughly mixed and smooth.
- Then we can add chia and flax seeds in this bowl and remix.
- Add chocolate chunks to the mixture and incorporate them in.
- Take the spoon and serrate the batter equally.
- Then we can roll the balls with our hands.
- Transfer the protein balls to the tray.
- Then we can put this tray in the refrigerator so that they get stable.
- We can also place this tray in the freezer for 15 minutes if you like it colder.
- Serve and savor!
TIPS:
- You can adjust the amount of sweetness bestowing to the taste or according to the sweetener used.
- We can use some additional almond flour if the batter is too soft to bite-sized.
- You could include some quantity of cinnamon or instant coffee for added taste & a twist on mocha.
- We can blend the cottage cheese in a blender before adding it to the mixture to get a smooth texture.
