Ingredients You Will Need
To make this amazing high protein fatbomb fluff you will need the following items from your pantry and fridge. Make sure all your ingredients are ready before you start so the process goes smoothly.
- Two scoops of high quality whey protein powder (choose vanilla or chocolate flavor)
- One cup of unsweetened almond milk or cold water
- One half teaspoon of xanthan gum (this is the secret to making it fluffy)
- Two tablespoons of creamy almond butter or peanut butter
- One tablespoon of cocoa powder (only if you want extra chocolate flavor)
- Five large ice cubes for extra volume and a cold temperature
- One teaspoon of stevia or your favorite liquid sweetener
- A pinch of sea salt to bring out the sweetness
Step by Step Method
- Start by taking out your large mixing bowl and a powerful hand mixer or a stand mixer because you will need a lot of power to create the air bubbles needed for the fluff.
- Pour the cold almond milk or water into the bowl first to ensure that the powder does not stick to the bottom of the container.
- Add the two scoops of protein powder on top of the liquid very carefully so it does not puff up into your face.
- Sprinkle the xanthan gum over the top of the mixture making sure you do not use too much because a little bit goes a very long way in thickening the liquid.
- Add your almond butter and sweetener into the bowl along with the pinch of salt and the cocoa powder if you decided to use it.
- Turn your mixer on the lowest speed possible at first just to combine the ingredients together without making a big mess on your kitchen counter.
- Once the liquid looks smooth and the powder is gone you can turn the speed up to medium and mix for about two minutes until it starts to look like a thick syrup.
- Drop in your ice cubes one by one while you continue to mix because the coldness helps the xanthan gum work its magic and create a stable foam.
- Now turn the mixer to the highest speed and beat the mixture for at least five full minutes without stopping.
- You will see the volume start to grow and grow until the bowl is nearly full of a thick and shiny fluff that holds its shape.
- Keep mixing until the ice cubes are completely crushed and the texture looks like stiff peaks of whipped cream or meringue.
- Use a spatula to scrape the sides of the bowl to make sure every bit of protein is fully incorporated into the fluff.
- Once it is thick enough that it does not fall off a spoon when you turn it upside down you are finished and ready to serve.
