Sweet, creamy, refreshing, and incredibly easy to make! These yogurt-coated blueberries are frozen until firm, creating a delicious bite-sized snack for hot days or whenever you want something cool and fruity.
Ingredients
Makes about 25–30 bites
- 2 cups fresh blueberries
- 1 cup plain or vanilla Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Optional
- 2 tablespoons powdered peanut butter
- 1–2 tablespoons melted dark chocolate for drizzling
- A little lemon zest for extra freshness
👩🍳 Instructions
- Wash the blueberries
Rinse the blueberries thoroughly and pat them completely dry with paper towels. This helps the yogurt coating stick. - Make the yogurt mixture
In a bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth and creamy. - Coat the blueberries
Add the blueberries to the yogurt mixture. Gently stir until each blueberry is well coated. - Arrange on a tray
Line a baking sheet or tray with parchment paper. Using a spoon or fork, place the yogurt-covered blueberries onto the tray individually, leaving a little space between them. - Freeze
Place the tray in the freezer for 2–3 hours, or until the bites are firm. - Serve
Once frozen, transfer the bites to an airtight freezer-safe container.
❄️ Storage
Keep them frozen for up to 1 month for the best texture. Let them sit at room temperature for 2–5 minutes before eating so the yogurt coating softens slightly.
💡 Tip
For an extra-creamy coating, use thick Greek yogurt rather than regular yogurt. If the mixture seems too thin, add a little more Greek yogurt until it coats the berries well.
