🫐 High-Protein Blueberry Overnight Oat Bake

Creamy, hearty, and packed with protein, this berry breakfast is a delicious make-ahead option. The yogurt and blueberries give it the same creamy, fruity look as the picture.

Ingredients

1 large serving

  • ½ cup old-fashioned rolled oats
  • ½ cup cottage cheese
  • ½ cup plain Greek yogurt
  • ½ scoop vanilla protein powder
  • ¼ cup unsweetened almond milk
  • 1 egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ cup blueberries
  • 1–2 teaspoons honey or zero-calorie sweetener, optional

For the topping

  • ¼ cup Greek yogurt
  • ½ cup fresh blueberries
  • 1–2 tablespoons blueberry compote or mashed blueberries
  • 1 tablespoon chopped almonds or granola, optional

👩‍🍳 Instructions

  1. Blend the wet ingredients:
    Add cottage cheese, egg, almond milk, vanilla, and Greek yogurt to a blender. Blend until smooth.
  2. Mix the batter:
    Pour into a bowl and stir in oats, protein powder, baking powder, and sweetener.
  3. Add blueberries:
    Gently fold in half of the blueberries.
  4. Bake:
    Transfer to a small greased baking dish. Bake at 350°F (175°C) for 25–30 minutes, until the center is set and the edges are lightly golden.
  5. Cool slightly:
    Let it rest for about 5–10 minutes.
  6. Add the creamy topping:
    Spread Greek yogurt over the top, then add the remaining blueberries and a spoonful of blueberry compote.
  7. Finish:
    Sprinkle with almonds or granola if desired.
