High-Protein Cottage Cheese Crepes Recipe

Light, soft, and packed with protein, these cottage cheese crepes are a perfect low-carb breakfast or snack. They have a deliciously creamy texture, are easy to make, and can be filled with sweet or savory toppings.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup almond flour (or oat flour)
  • 1 teaspoon vanilla extract (for sweet version)
  • 1–2 teaspoons sweetener of choice (optional)
  • Pinch of salt
  • Cooking spray or a little butter/oil for the pan

Instructions

  1. Blend the batter:
    Add cottage cheese, eggs, almond flour, vanilla, sweetener, and salt to a blender. Blend until smooth and creamy. Let the batter rest for 5 minutes to thicken slightly.
  2. Cook the crepes:
    Heat a non-stick pan over medium heat and lightly grease it. Pour a thin layer of batter into the pan and swirl gently to spread it out.
  3. Flip carefully:
    Cook for about 1–2 minutes until the edges look set. Flip the crepe and cook the other side for another 30–60 seconds.
  4. Fill and serve:
    Add your favorite filling, fold or roll the crepe, and enjoy warm.
