Peanut Butter Cake Mix Cookies

Ingredients:
1 cup creamy peanut butter
2 large eggs
1/2 cup vegetable oil
15.25 ounce yellow cake mix
Directions:
1 Preheat the oven to 350°F
2 Line 2 large baking trays with silicone baking mats or parchment paper
3 Add the creamy peanut butter eggs and vegetable oil to a large mixing bowl
4 Beat the ingredients with a handheld electric mixer until smooth and well combined
5 Add the yellow cake mix to the peanut butter mixture
6 Continue beating until the ingredients come together and form a thick cookie dough
7 Scoop about 2 tablespoons of dough for each cookie using a slightly heaping 1 1/2 tablespoon cookie scoop if desired
8 Roll each portion of dough between your hands to form an even ball
9 Arrange the dough balls on the prepared baking trays leaving a couple of inches of space between each one
10 Use a fork to gently press a cross hatch pattern into the top of each dough ball slightly flattening each cookie
11 Place the trays in the preheated oven and bake for 12 to 15 minutes until the cookies are golden around the edges and on the bottom
12 Rotate the baking trays once halfway through the baking time to help the cookies bake evenly
13 Remove the trays from the oven and leave the cookies on the baking trays until completely cooled
14 Once completely cool carefully remove the cookies from the trays and serve
