Spinach Garlic Meatballs Stuffed with Cheese

Ingredients

For the Spinach Garlic Mix

8 ounces fresh baby spinach
3 cloves garlic, finely chopped
1–2 tablespoons olive oil
Salt and pepper to taste

For the Meatballs

1 lb ground beef (or chicken/turkey)
1 egg
½ cup breadcrumbs
¼ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste

For the Filling

6–8 mozzarella cubes (cut into small pieces)
½ cup shredded mozzarella (for topping)

Instructions

Prepare Spinach Garlic Mixture
Heat olive oil in a pan over medium heat. Add garlic and cook until fragrant. Add spinach and cook until wilted. Season with salt and pepper. Remove from heat and let cool slightly.

Prepare Meatball Mixture
In a large bowl, combine ground meat, egg, breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until combined.

Stuff the Meatballs
Take a small portion of meat mixture, flatten in your hand, add a cube of mozzarella and a small spoon of spinach mixture in the center. Roll into a ball and seal completely. Repeat with remaining mixture.

Cook the Meatballs
Place meatballs in a greased baking dish or skillet. Bake at 375°F (190°C) for 20–25 minutes until cooked through.

Add Cheese Topping
Sprinkle shredded mozzarella over meatballs and broil for 2–3 minutes until cheese melts and becomes golden.

Serve
Serve hot with extra garlic butter or fresh herbs if desired.
