Crispy keto toast topped with creamy cottage cheese, juicy tomatoes, and a flavorful balsamic drizzle — simple, fresh, and insanely delicious!
Ingredients
For the Keto Bread
1½ cups almond flour
2 tablespoons psyllium husk powder
1 teaspoon baking powder
¼ teaspoon salt
3 large eggs
2 tablespoons olive oil
¼ cup warm water
Toppings
½ cup cottage cheese
1 medium tomato, sliced
1 tablespoon olive oil
1 teaspoon balsamic vinegar (or sugar-free balsamic glaze)
½ teaspoon dried oregano
Flaky salt, to taste
Fresh cracked black pepper
Optional: fresh basil leaves or red pepper flakes
Instructions
Make the keto bread
Preheat oven to 350°F (175°C).
In a bowl, mix almond flour, psyllium husk, baking powder, and salt. Add eggs, olive oil, and warm water. Stir until a dough forms.
Bake
Shape into small slices or rolls and place on a parchment-lined tray. Bake for 20–25 minutes until golden brown. Let cool slightly.
Toast the bread
Slice and toast the keto bread until crispy and golden.
Assemble
Spread cottage cheese generously over the toasted bread. Top with tomato slices.
Finish
Drizzle with olive oil and balsamic vinegar. Sprinkle oregano, flaky salt, and black pepper on top.
