Ingredients — makes 1 large loaf
- 1½ cups all-purpose flour
- ½ cup vanilla or unflavored protein powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- 1 cup plain Greek yogurt
- ⅓ cup honey or maple syrup
- ¼ cup unsweetened applesauce
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp lemon zest
- ¾ cup fresh or frozen cranberries, roughly chopped
- ¼ cup chopped walnuts or pecans, optional
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- In a bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, Greek yogurt, honey, applesauce, melted butter, vanilla, and lemon zest until smooth.
- Add the wet ingredients to the dry ingredients. Stir gently until just combined. Don’t overmix, or the loaf can become dense.
- Fold in the cranberries and optional nuts.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack and cool completely before slicing.
🍋 Optional high-protein glaze
Mix:
- ½ cup Greek yogurt
- 1–2 tbsp powdered sweetener
- ½ tsp vanilla
- 1 tsp lemon juice
Spread over the completely cooled loaf.
Approximate nutrition
If cut into 10 slices, each slice provides roughly 10–13 g protein, depending on the protein powder and Greek yogurt used.
Tip: For an even higher-protein loaf, use a Greek yogurt containing around 15–20 g protein per serving and a protein powder with 20–25 g protein per scoop.
