🍒 High-Protein Cranberry Yogurt Loaf

Ingredients — makes 1 large loaf

  • 1½ cups all-purpose flour
  • ½ cup vanilla or unflavored protein powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • ⅓ cup honey or maple syrup
  • ¼ cup unsweetened applesauce
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • ¾ cup fresh or frozen cranberries, roughly chopped
  • ¼ cup chopped walnuts or pecans, optional

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, Greek yogurt, honey, applesauce, melted butter, vanilla, and lemon zest until smooth.
  4. Add the wet ingredients to the dry ingredients. Stir gently until just combined. Don’t overmix, or the loaf can become dense.
  5. Fold in the cranberries and optional nuts.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack and cool completely before slicing.

🍋 Optional high-protein glaze

Mix:

  • ½ cup Greek yogurt
  • 1–2 tbsp powdered sweetener
  • ½ tsp vanilla
  • 1 tsp lemon juice

Spread over the completely cooled loaf.

Approximate nutrition

If cut into 10 slices, each slice provides roughly 10–13 g protein, depending on the protein powder and Greek yogurt used.

Tip: For an even higher-protein loaf, use a Greek yogurt containing around 15–20 g protein per serving and a protein powder with 20–25 g protein per scoop.
