🎃 Pumpkin Cream Cheese Muffins Recipe

Ingredients (Makes 12 muffins)

For the Pumpkin Muffin Batter:

  • 1 ¾ cups all-purpose flour
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • ½ cup brown sugar
  • ¼ cup maple syrup or honey
  • ½ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp cinnamon
  • ¼ tsp salt

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 egg yolk

Instructions

  1. Prepare the oven:
    Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Make cream cheese filling:
    Beat softened cream cheese, powdered sugar, vanilla, and egg yolk until smooth and creamy.
  3. Prepare muffin batter:
    In a bowl, whisk pumpkin puree, eggs, sugar, maple syrup, oil, and vanilla.
    Add flour, baking powder, baking soda, spices, and salt. Mix until just combined.
  4. Fill muffin cups:
    Add a spoonful of pumpkin batter into each liner. Add a layer of cream cheese filling in the center, then cover with more pumpkin batter.
  5. Bake:
    Bake for 20–25 minutes until a toothpick inserted into the pumpkin part comes out clean.
  6. Cool & serve:
    Let muffins cool completely before serving for the best creamy texture.
