Ingredients (Makes 12 muffins)
For the Pumpkin Muffin Batter:
- 1 ¾ cups all-purpose flour
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- ½ cup brown sugar
- ¼ cup maple syrup or honey
- ½ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- 1 ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- ¼ tsp salt
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 egg yolk
Instructions
- Prepare the oven:
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners. - Make cream cheese filling:
Beat softened cream cheese, powdered sugar, vanilla, and egg yolk until smooth and creamy. - Prepare muffin batter:
In a bowl, whisk pumpkin puree, eggs, sugar, maple syrup, oil, and vanilla.
Add flour, baking powder, baking soda, spices, and salt. Mix until just combined. - Fill muffin cups:
Add a spoonful of pumpkin batter into each liner. Add a layer of cream cheese filling in the center, then cover with more pumpkin batter. - Bake:
Bake for 20–25 minutes until a toothpick inserted into the pumpkin part comes out clean. - Cool & serve:
Let muffins cool completely before serving for the best creamy texture.
