Cool, crisp, creamy, and tangy, this simple 4-ingredient cucumber salad makes an easy side dish for spring gatherings, picnics, and family dinners. It comes together in just minutes!
Ingredients
Serves 4–6
- 4 medium English cucumbers, thinly sliced
- ¾ cup sour cream
- 2 tablespoons apple cider vinegar
- 1 teaspoon granulated sugar
- Salt and freshly ground black pepper, to taste
👩🍳 Instructions
- Prepare the cucumbers:
Wash and thinly slice the cucumbers. If using regular cucumbers, you can peel them first if preferred. - Make the dressing:
In a large bowl, whisk together the sour cream, apple cider vinegar, and sugar until smooth and creamy. - Combine:
Add the sliced cucumbers and gently toss until they’re evenly coated with the dressing. - Season:
Add salt and plenty of freshly ground black pepper to taste. - Chill:
Refrigerate for 20–30 minutes before serving. This allows the flavors to come together while keeping the cucumbers crisp. - Serve:
Give it one gentle stir before serving and add a little extra black pepper on top, just like in the picture. 🥒
⭐ Tip
For the best crunch, slice the cucumbers shortly before serving and don’t let the salad sit in the dressing for too many hours. English cucumbers work especially well because they’re crisp and have fewer seeds.
