🥜🍫 Peanut Butter Protein Balls

Creamy peanut butter centers covered in chocolate—these taste like peanut butter cups while making a convenient protein-rich snack.

Ingredients

Makes: 10–12 balls

Peanut Butter Filling

  • ½ cup natural creamy peanut butter
  • ½ cup vanilla protein powder
  • ¼ cup oat flour
  • 2 tbsp honey or maple syrup
  • 1–2 tbsp milk, as needed
  • ½ tsp vanilla extract
  • Pinch of salt

Chocolate Coating

  • 1 cup semi-sweet or dark chocolate chips
  • 1 tsp coconut oil, optional

Instructions

  1. Make the filling:
    Add peanut butter, protein powder, oat flour, honey, vanilla, and salt to a bowl. Mix until a thick dough forms.
  2. Adjust the texture:
    If the mixture is too dry or crumbly, add milk 1 tablespoon at a time until it becomes soft enough to roll.
  3. Shape:
    Scoop out about 1 tablespoon of the mixture and roll it between your palms into a smooth ball. Repeat with the remaining mixture.
  4. Chill:
    Place the balls on a parchment-lined plate or tray and refrigerate for 20–30 minutes.
  5. Melt the chocolate:
    Melt the chocolate chips in the microwave in 20-second intervals, stirring between each interval. Stir in the coconut oil if using.
  6. Coat:
    Dip each peanut butter ball into the melted chocolate and place it back on the parchment.
  7. Set:
    Refrigerate for 20–30 minutes, or until the chocolate coating has hardened.

Keep refrigerated in an airtight container for up to 1 week.
