🍫 No-Sugar Chocolate Protein Mousse

Ingredients

  • 1 cup full-fat or low-fat cottage cheese
  • 2 tbsp unsweetened cocoa powder
  • 2–3 tbsp powdered zero-calorie sweetener, to taste
  • ½ tsp vanilla extract
  • 2 tbsp unsweetened almond milk, plus more if needed
  • 1–2 tbsp smooth peanut butter, optional
  • Pinch of salt
  • ½ cup ice cubes, optional for a colder, thicker dessert

Instructions

  1. Add everything to a blender:
    Combine cottage cheese, cocoa powder, sweetener, vanilla, almond milk, peanut butter if using, and salt.
  2. Blend until completely smooth:
    Blend for 1–2 minutes, scraping down the sides as needed. Keep blending until there are no visible cottage-cheese curds.
  3. Adjust the consistency:
    Add a tiny splash of almond milk if it’s too thick. For a thicker frozen-style texture, add the ice and blend again.
  4. Taste and adjust:
    Add more cocoa for a deeper chocolate flavor or more sweetener if desired.
  5. Chill:
    For a mousse-like dessert, refrigerate for 30–60 minutes. For a firmer, ice-cream-style treat, freeze for 1–2 hours, stirring once halfway through.
  6. Serve:
    Spoon into a glass or bowl and top with a little cocoa powder, shaved dark chocolate, or berries.

🍫 Tip

For the ultra-smooth texture shown in the picture, use a high-speed blender and blend longer than you think you need to. Cottage cheese becomes surprisingly creamy when thoroughly blended.

Note: If you need it strictly no added sugar, choose unsweetened cocoa, unsweetened milk, and a zero-sugar sweetener.
