Peanut Butter Filling
- ½ cup natural creamy peanut butter
- ½ cup vanilla protein powder
- ¼ cup oat flour
- 2 tbsp honey or maple syrup
- 1–2 tbsp milk, as needed
- ½ tsp vanilla extract
- Pinch of salt
Chocolate Coating
- 1 cup semi-sweet or dark chocolate chips
- 1 tsp coconut oil, optional
Instructions
- Make the filling:
Add peanut butter, protein powder, oat flour, honey, vanilla, and salt to a bowl. Mix until a thick dough forms. - Adjust the texture:
If the mixture is too dry or crumbly, add milk 1 tablespoon at a time until it becomes soft enough to roll. - Shape:
Scoop out about 1 tablespoon of the mixture and roll it between your palms into a smooth ball. Repeat with the remaining mixture. - Chill:
Place the balls on a parchment-lined plate or tray and refrigerate for 20–30 minutes. - Melt the chocolate:
Melt the chocolate chips in the microwave in 20-second intervals, stirring between each interval. Stir in the coconut oil if using. - Coat:
Dip each peanut butter ball into the melted chocolate and place it back on the parchment. - Set:
Refrigerate for 20–30 minutes, or until the chocolate coating has hardened.
