🥬🍲 Slow Cooker Cabbage & Ground Beef Stew

Ingredients

  • 1 lb (450 g) lean ground beef
  • ½ large head green cabbage, chopped
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 3 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil, if browning the beef

Instructions

  1. Brown the beef:
    Heat a skillet over medium-high heat. Add the ground beef and onion and cook until the beef is browned. Drain excess fat.
  2. Load the crockpot:
    Add the chopped cabbage and carrots to the slow cooker. Add the cooked beef and onion, followed by the garlic.
  3. Add tomatoes and broth:
    Pour in the diced tomatoes, tomato sauce, beef broth, and tomato paste.
  4. Season:
    Add Worcestershire sauce, paprika, Italian seasoning, onion powder, garlic powder, salt, and pepper. Stir everything together.
  5. Slow cook:
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the cabbage and carrots are tender.
  6. Adjust:
    Taste and add more salt, pepper, or seasoning if needed. If you prefer a thicker stew, leave the lid slightly open for the final 20–30 minutes.
  7. Serve:
    Ladle into bowls and serve hot with crusty bread, rice, or simply enjoy it on its own. 🍲

🌶️ Optional additions

For a little more flavor, add ½ teaspoon red pepper flakes, chopped celery, or a splash of hot sauce.
