🥩🥬 Healthy Chinese Ground Beef & Cabbage Stir-Fry

A quick, savory one-pan meal loaded with lean ground beef, tender cabbage, colorful carrots, garlic, and ginger. It’s perfect for an easy weeknight dinner and can be served on its own or over rice.

Ingredients

Serves 4

  • 1 lb (450 g) lean ground beef
  • ½ head green cabbage, thinly sliced
  • 1 medium carrot, julienned
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sriracha or chili garlic sauce, optional
  • ½ tsp black pepper
  • 2–3 green onions, sliced
  • 1 tbsp sesame seeds, optional

Instructions

  1. Cook the beef:
    Heat a large skillet or wok over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart as it browns. Drain excess grease if needed.
  2. Add aromatics:
    Add the sesame oil, minced garlic, and fresh ginger. Stir-fry for 30–60 seconds, until fragrant.
  3. Add vegetables:
    Add the sliced cabbage and carrots. Cook for 5–7 minutes, stirring frequently, until the cabbage becomes tender but still has a little bite.
  4. Make the sauce:
    Stir together the soy sauce, rice vinegar, honey, and sriracha.
  5. Combine:
    Pour the sauce over the beef and vegetables. Toss everything together and cook for another 2–3 minutes, allowing the flavors to combine.
  6. Finish:
    Turn off the heat and sprinkle with sliced green onions and sesame seeds.

🍚 Serving Ideas

Enjoy it by itself for a lighter meal, or serve over steamed rice, cauliflower rice, or noodles.

Tip: For an even more colorful stir-fry like the photo, add sliced bell pepper or a handful of chopped green onions near the end.
