Zucchini Stacks:
- 3 medium zucchini
- 1½ cups shredded vegan mozzarella cheese
- ¼ cup vegan Parmesan cheese (optional)
- 2 cloves garlic, minced
- 2 tbsp fresh parsley or basil, chopped
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
Optional Crispy Coating:
- ½ cup breadcrumbs (regular or gluten-free)
- 2 tbsp nutritional yeast
- 1 tbsp olive oil
Instructions:
1. Prepare the Zucchini
- Wash and slice zucchini into thick rounds (about ½ inch).
- Lightly sprinkle with salt and let sit for 10 minutes.
- Pat dry with a paper towel to remove extra moisture.
2. Make the Filling
- In a bowl, combine vegan mozzarella, vegan Parmesan, garlic, parsley, Italian seasoning, paprika, salt, and pepper.
- Mix until well combined.
3. Assemble the Stacks
- Place one zucchini slice on a lined baking tray.
- Add a small amount of cheese mixture on top.
- Cover with another zucchini slice.
- Repeat until all stacks are assembled.
4. Bake
- Brush the zucchini stacks lightly with olive oil.
- Sprinkle breadcrumbs on top if using.
- Bake at 400°F (200°C) for 20–25 minutes until golden and crispy.
- For extra browning, broil for 1–2 minutes at the end.
