This keto-friendly Big Mac Chaffle combines crispy cheese waffles (“chaffles”), seasoned beef, special burger sauce, lettuce, pickles, and cheese for a low-carb version of the classic fast-food favorite.

Ingredients

For the Chaffles

For the Big Mac Sauce

  • 1 tablespoon sugar-free ketchup
  • 1 teaspoon yellow mustard
  • 1 tablespoon finely chopped dill pickles or pickle relish
  • ยฝ teaspoon white vinegar
  • ยผ teaspoon paprika
  • ยผ teaspoon onion powder

Toppings

  • ยฝ cup shredded iceberg lettuce
  • 4 dill pickle slices
  • 2 slices cheddar cheese
  • 2 tablespoons finely diced onion (optional)

Instructions

Step 1: Make the Chaffles

  1. Preheat a waffle maker.
  2. In a bowl, whisk together eggs, mozzarella cheese, almond flour, and garlic powder.
  3. Spray the waffle maker lightly with cooking spray.
  4. Add half the mixture and cook for 3โ€“5 minutes until golden and crisp.
  5. Repeat to make a total of 4 chaffles.
  6. Set aside.

Step 2: Cook the Beef

  1. Heat a skillet over medium-high heat.
  2. Add ground beef and season with onion powder, garlic powder, salt, and pepper.
  3. Cook until browned and fully cooked, breaking it into small crumbles.
  4. Drain excess fat if desired.

Step 3: Make the Sauce

  1. In a small bowl, combine:
    • Mayonnaise
    • Sugar-free ketchup
    • Mustard
    • Chopped pickles
    • Vinegar
    • Paprika
    • Onion powder
  2. Stir until smooth.

Step 4: Assemble

For each sandwich:

  1. Place one chaffle on a plate.
  2. Spread a spoonful of Big Mac sauce.
  3. Add lettuce and a slice of cheddar cheese.
  4. Add half of the cooked beef.
  5. Top with pickles and diced onion.
  6. Drizzle with more sauce.
  7. Add another chaffle on top.

  • Cook the chaffles a little longer for extra crispiness.
