Ingredients:
- 4 large chicken breasts (boneless & skinless)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated parmesan cheese
- 1 cup fresh spinach
- ⅓ cup sun-dried tomatoes (chopped)
- 3 cloves garlic (minced)
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh basil for garnish (optional)
Instructions:
Step 1: Prepare Chicken
- Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a pan and lightly sear chicken for 2–3 minutes per side (optional but adds flavor).
Step 2: Slow Cooker Setup
- Place chicken breasts in the crockpot.
- Add minced garlic, chicken broth, and sun-dried tomatoes.
- Pour heavy cream over the chicken.
- Cover and cook:
- LOW: 4–6 hours
- HIGH: 2–3 hours
until chicken is tender and fully cooked.
Step 3: Finish the Sauce
- Remove chicken briefly and shred or keep whole.
- Stir parmesan cheese and spinach into the sauce.
- Cover for another 5–10 minutes until spinach wilts and sauce becomes creamy.
- Return chicken to the sauce and coat well.
