🍞 Fluffy Brioche Bread

🧾 Ingredients

  • 3ΒΌ cupsΒ all-purpose flour
  • 2ΒΌ tspΒ instant yeastΒ (1 packet)
  • ΒΌ cupΒ sugar
  • 1 tspΒ salt
  • 4 largeΒ eggs, room temperature
  • Β½ cupΒ warm milk
  • ΒΎ cupΒ unsalted butter, very soft
  • 1 tspΒ vanilla extractΒ (optional, sweet-style brioche)

Egg wash:

  • 1 egg + 1 tbsp milk

1️⃣ Activate & mix

In a bowl, mix warm milk, yeast, and 1 tbsp sugar. Rest 5 minutes until foamy.
Add eggs, remaining sugar, salt, vanilla, and 2 cups flour. Mix until sticky.


2️⃣ Knead & add butter

Gradually add remaining flour.
Knead 5–7 minutes until smooth and elastic.
Knead in soft butter, 1 tbsp at a time, until dough is glossy and stretchy (8–10 minutes).


3️⃣ First rise

Place dough in a greased bowl. Cover and rise 1–1Β½ hours until doubled.


4️⃣ Shape

Punch down dough. Divide into 3–4 balls.
Place into a buttered loaf pan. Cover and rise again 30–45 minutes.


5️⃣ Bake

Brush with egg wash.
Bake at 350Β°F (175Β°C) for 25–30 minutes until deep golden.
Cool 15 minutes before slicing.
