Ingredients — 4 servings
Potato bites
- 600 g baby potatoes or Yukon Gold potatoes
- 150 g low-fat cottage cheese
- 100 g shredded reduced-fat cheddar or mozzarella
- 1 large egg
- 30 g grated Parmesan
- 2 tbsp Greek yogurt
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp black pepper
- ¾ tsp salt
- 1 tbsp olive oil
- 1 tbsp chopped parsley or chives
Optional crispy topping
- 2 tbsp breadcrumbs or crushed high-protein crackers
- 1 tbsp Parmesan
Instructions
- Prepare the potatoes:
Wash the potatoes well and slice them into rounds about 1–1.5 cm thick. Leave the skin on for extra texture. - Par-cook:
Boil the potato slices in salted water for 5–7 minutes, just until they begin to soften. Drain and let them steam-dry for a few minutes. - Make the protein topping:
Mix cottage cheese, Greek yogurt, egg, Parmesan, garlic powder, smoked paprika, onion powder, black pepper and salt until creamy. Fold in about half of the shredded cheese. - Arrange:
Heat the oven to 220°C / 425°F. Place potatoes on a parchment-lined baking sheet. Brush lightly with olive oil. - Add the topping:
Spoon the cottage-cheese mixture over each potato round. Sprinkle the remaining shredded cheese over the top. Add breadcrumbs/extra Parmesan if using. - Bake:
Bake for 18–25 minutes, until the potatoes are tender and the cheese is deeply golden and bubbling. - Make them extra crispy:
Switch to the broiler/grill for 1–3 minutes at the end. Watch closely so the cheese doesn’t burn. - Serve:
Rest for 3–5 minutes, then garnish with parsley or chives. Serve hot with a Greek-yogurt garlic dip.

Mix:
- 150 g Greek yogurt
- ½ tsp garlic powder
- 1 tsp lemon juice
- Pinch of salt
- Black pepper
- Fresh parsley
