🍫🥜 High-Protein Pecan Pie Brownies

Ingredients

For the protein brownie base

  • 1 cup oat flour
  • ½ cup chocolate protein powder
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup Greek yogurt
  • ¼ cup unsweetened applesauce
  • 3 tbsp maple syrup or honey
  • 2 tbsp melted dark chocolate
  • 1 tsp vanilla extract
  • 2–4 tbsp milk, as needed

For the pecan topping

  • 1½ cups pecan halves
  • ⅓ cup maple syrup
  • 2 tbsp natural peanut butter or almond butter
  • 2 tbsp Greek yogurt
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 egg
  • Optional: 1–2 tbsp brown sugar or coconut sugar

Method

  1. Prepare the oven: Heat oven to 175°C / 350°F. Line an approximately 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. Make the brownie batter: Whisk together oat flour, protein powder, cocoa powder, baking powder and salt.
  3. In another bowl, whisk eggs, Greek yogurt, applesauce, maple syrup, melted chocolate and vanilla.
  4. Combine the wet and dry ingredients. Add milk gradually until you have a thick, smooth brownie batter.
  5. Spread the batter evenly in the prepared pan.
  6. Make the pecan topping: Whisk maple syrup, nut butter, Greek yogurt, melted butter, vanilla, cinnamon, salt and egg until smooth.
  7. Fold in the pecans, then spoon the mixture evenly over the brownie batter.
  8. Bake for 28–35 minutes, until the brownie center is set and the pecan topping is bubbling and golden. Don’t overbake—the brownie should remain slightly fudgy.
  9. Cool completely for at least 30–45 minutes before slicing. For cleaner slices, refrigerate for about 1 hour.

Nutrition varies depending on the protein powder, yogurt, nut butter and sweetener used.

✨ For an even higher-protein version

Use ¾ cup protein powder instead of ½ cup and add an extra 2 tbsp Greek yogurt. If the batter becomes too thick, add 1–2 tablespoons of milk.

Best finishing touch: drizzle a little melted dark chocolate over the cooled pecan brownies and sprinkle with flaky sea salt.
