🍓 High-Protein Strawberry Cheesecake Mousse

Ingredients

  • 1 box (8.5 g / 0.3 oz) sugar-free strawberry Jell-O
  • ½ cup (120 ml) boiling water
  • 1 cup (225 g) low-fat cottage cheese
  • 1 cup (225 g) nonfat Greek yogurt
  • ½ cup (120 g) fresh or frozen strawberries
  • 1–2 tbsp zero-calorie sweetener, to taste
  • ½ tsp vanilla extract
  • ¼ cup (60 ml) cold water
  • Optional: 1 scoop (25–30 g) vanilla or strawberry whey protein powder

Method

  1. Dissolve the Jell-O: Add the strawberry gelatin powder to the boiling water. Whisk for about 1–2 minutes until completely dissolved.
  2. Let it cool for 5–10 minutes. Don’t let it fully set.
  3. Add cottage cheese, Greek yogurt, strawberries, vanilla, sweetener, and cold water to a blender.
  4. Blend for 1–2 minutes until completely smooth and creamy.
  5. Add the slightly cooled Jell-O mixture and whey protein, if using. Blend again for about 30 seconds.
  6. Pour into 4–5 small dessert cups.
  7. Refrigerate for 2–3 hours, or until thick and fluffy.
  8. For an extra fluffy texture, give the chilled mousse a quick whip with a hand mixer before serving.

💪 Approximate protein

Using nonfat Greek yogurt, low-fat cottage cheese, and 1 scoop whey:

Per 5 servings: ~18–22 g protein
Per 4 servings: ~22–27 g protein

🍓 Optional toppings

  • Fresh sliced strawberries
  • A spoonful of Greek yogurt
  • Crushed freeze-dried strawberries
  • A few white chocolate chips
  • Sugar-free strawberry sauce

Tip: For the thickest, creamiest mousse, use cottage cheese + Greek yogurt + whey protein and blend until absolutely smooth.
