Ingredients
- 1 box (8.5 g / 0.3 oz) sugar-free strawberry Jell-O
- ½ cup (120 ml) boiling water
- 1 cup (225 g) low-fat cottage cheese
- 1 cup (225 g) nonfat Greek yogurt
- ½ cup (120 g) fresh or frozen strawberries
- 1–2 tbsp zero-calorie sweetener, to taste
- ½ tsp vanilla extract
- ¼ cup (60 ml) cold water
- Optional: 1 scoop (25–30 g) vanilla or strawberry whey protein powder
Method
- Dissolve the Jell-O: Add the strawberry gelatin powder to the boiling water. Whisk for about 1–2 minutes until completely dissolved.
- Let it cool for 5–10 minutes. Don’t let it fully set.
- Add cottage cheese, Greek yogurt, strawberries, vanilla, sweetener, and cold water to a blender.
- Blend for 1–2 minutes until completely smooth and creamy.
- Add the slightly cooled Jell-O mixture and whey protein, if using. Blend again for about 30 seconds.
- Pour into 4–5 small dessert cups.
- Refrigerate for 2–3 hours, or until thick and fluffy.
- For an extra fluffy texture, give the chilled mousse a quick whip with a hand mixer before serving.
💪 Approximate protein
Using nonfat Greek yogurt, low-fat cottage cheese, and 1 scoop whey:
Per 5 servings: ~18–22 g protein
Per 4 servings: ~22–27 g protein
🍓 Optional toppings
- Fresh sliced strawberries
- A spoonful of Greek yogurt
- Crushed freeze-dried strawberries
- A few white chocolate chips
