Ingredients
- 2 cups (500 g) low-fat cottage cheese
- 1 cup (240 g) plain Greek yogurt
- 2 cups (300 g) mandarin oranges, peeled and segmented
- 1–2 tbsp honey or maple syrup, optional
- 1 tsp vanilla extract
- ¼ cup chopped almonds or walnuts, optional
- 1 tbsp orange zest, optional
- Pinch of salt
Instructions
- Add cottage cheese, Greek yogurt, vanilla, honey, and salt to a large bowl.
- Stir until creamy and well combined. For a smoother texture, blend the cottage cheese first.
- Gently fold in the mandarin segments.
- Add chopped nuts and orange zest if using.
- Taste and adjust sweetness.
- Refrigerate for 20–30 minutes before serving.
💪 Extra-Protein Version
For an even higher-protein dessert/snack, mix in 1 scoop vanilla or unflavored protein powder. If the mixture becomes too thick, add 2–3 tbsp milk.
