🍓 High-Protein Mixed Berry Ice Cream

Ingredients

  • 2 cups frozen mixed berries
  • 1 cup Greek yogurt (high-protein, plain or vanilla)
  • ½ cup cottage cheese
  • ¼ cup milk of choice
  • 1–2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Optional: 1 scoop vanilla protein powder
  • Optional: 1 tbsp chia seeds for extra fiber

Instructions

  1. Add the frozen berries, Greek yogurt, cottage cheese, milk, honey, vanilla, and protein powder to a high-speed blender.
  2. Blend until completely smooth and creamy. Scrape down the sides as needed.
  3. Taste and adjust sweetness if necessary.
  4. For a soft-serve texture, serve immediately.
  5. For scoopable ice cream, transfer to a freezer-safe container and freeze for 2–3 hours.
  6. Let it sit at room temperature for 5–10 minutes before scooping.
  7. Top with fresh berries, coconut flakes, or a sprinkle of chia seeds.

Using Greek yogurt, cottage cheese, and 1 scoop protein powder, the whole batch can provide roughly 55–70 g protein, depending on the brands used.

Tip: For the creamiest texture, use full-fat Greek yogurt and avoid freezing the mixture overnight unless you’re willing to let it soften before serving.
